Making a heat map from three vectors

I want to make a heat map from three vectors with the same length.
The first vector represents x-coordinates of all points. The second vector contains the y-coordinates and the last one shows the heights. This is not a perfect mesh since not all points are evenly spaced along x- or y-direction.
How could I make a heat map in which the intervals are not equal?
