How can I plot acceleration data on a polar plot?

I have N-S, E-W and vertical time series of accelerations derived from an accelerometer out in the field, and from these I’ve derived an overall direction vector in compass coordinates (i.e. 0/360 is N, 90 is E and so on).
I’d really like to somehow plot this data on a polar surface plot (ideally using the PolarPlot3D function here: https://uk.mathworks.com/matlabcentral/fileexchange/13200-3d-polar-plot), but I’ve struggled to get the data into the format that the function requires.
Ideally the outcome would be a polar plot in a compass style using the direction data, the radius being the (relative) frequency with which impacts in the vertical time series occur (in log scale), and then perhaps coloured by the absolute value of these impacts. I’m envisioning something similar in appearance to this…:
Any advice on how to go about doing this would be greatly appreciated. I’ve included a sample of the data in the attached file, although the time series is considerably longer. Thanks :)
