[righe, colonne]=size(prova)
primo_elemento=prova(3,:)
I want to subtract this element to the whole prova matrix.

If you mean to remove
prova(3,:)=[]

I want to substract at each columns of the prova variable the primo_elemento element.

bsxfun(@minus, prova,prova(3,:))
