How do I change the Java JRE version that MATLAB Runtime is using on Windows?

I would like to use a different version of JRE than the default used in MATLAB Runtime version R2023b (23.2) on Windows.

I can not use version JRE 1.8.0_202 due to it being flag for a security flaw by our program Cyber team; but can use JRE version 11+
