How to extract and do curve plot from the mat file

Hello All,
I am trying to learn wireless channel modeling. I have some captured data using two USRP devices . The data (Baseband samples transmitted over USB 2 connected to laptop) was captured and stored in .dat file (64 bit I/Q format). I converted the .dat file to .mat file using octave.
I imported the mat file in MATLAB , it created a vector having 100000 samples row values of complex double (I+JQ). I tried to plot from that vector data but failed. Also, could not get any clue for curve fitting on those collected data. how can i separate I and Q from that mat file for further analysis.
Any help is appreciated.

You can use Communications System Toolbox together with USRP Support Package to capture the signals directly in MATLAB and avoid data conversion problems.
