Processing time - seems to get stuck after drawing graphs

My Matlab is quite quick at running scripts, but most of the time - after the graphs have been drawn - there seems to be a period of time when Matlab stops responding/has a little bit of think for 5-10 seconds. During this period my mouse pointer turns into the Mac symbol for 'the program is busy' i.e. the colourful circle (the equivalent to the egg timer of PCs if they still have that).
Is this normal?

How big is the data set you are plotting?

that used to happen to me when running scripts, so I switched to only using functions to get graphs and it went away. why? I don't know :(
