Reference for scattered interpolation

Where could I find the reference for the explanation of theory for the method used in scatteredInterpolant? I want to understand the processing of interpolation in this function. I use it for 3D interpolation.

How to find the reference for griddedInterpolant function?

I want to apply linear and nonlinear, interpolation and extrapolation to a 3D data.

It seems that the choice of function is very limited because it is 3D data and it is not equal spacing in one dimension.
