FFT analysis over time - 2D or 3D graph (Continuous Wavelet Transform?)

I have a model where a wind turbine is connected to two back to back converters and under specific circumstances and as the wind changes I want to perform an FFT analysis over time or over rotational speed of the turbine.

So What I want in the end is a 2D graph where colours will indicate harmonic freq intensity.

Outside matlab I would call this a Continuous Wavelet Transform graph but I am not sure if there is a block that can perform what I want exactly.

Any help would be appreciated.
