how to high mean value in binary image?

this my ExG binary image but the image does not give a better visual of greenness its also show straw in the background but this method gives better mean result compare to other methods which give a better visualization of greenness.

What does "high mean" means?
Is this: If white pixels more, which gives high mean, more green more high mean (based on segmentation too).
Is there any necessity?

As per your comments, what I have understood, more mean more greenary?
Right?
If this is the case, if more greenary is there in the image, then only you will get more white pixels (more mean, because you are segmenting greeny pixels) on the segmented image.
Please do clarify?
