Create a function from a matrices values

Hello, I have a problem with my simulink program, first,I created matricees of 2D (which is also included in another matrices considering them as a variables table).. So I create a simulink with matrices and I have an error in the bloc concatenate. Because of that I want to create a function of two variable

s and adding it to the big matrix. My question is can I create a function from a matrix directly in matlab ? Or I have to plot and extract a linear function for exemple to have the equation ? Thank you in advance,
