To process an image using entropy you can utilize the entropyfilt function

Here's a small example:

img = imread('your_image.jpg'); % Load the image
grayImg = rgb2gray(img);        % Convert to grayscale
entropyFilteredImg = entropyfilt(grayImg); % Apply entropy filter

% Display the original and entropy-filtered images
imshowpair(img, entropyFilteredImg, 'montage');
