Color Surface Plot for specific areas

Is it possible to color a surface plot using my own thresshold values? So that I can say, the color needs to change when the plot hits a certain value?

Yes, its possible. Use cdata property

[x,y,z] = peaks(20);
c = rand(20,20);
surf(x,y,z,'cdata',c)
