How to create 2D Look up table from measurement data?

Hello guys,
I would like to adjust/ optimize my 2-D look up table with measurement datas..
Could you please give me advices how can I built my program.?
Does it make sense to built my model at the beginning with poly2D?
and than use PolyfitnTools to have smoother calibration?
