How to avoid collision of UAVs using GPS Sensor information?

(exampleHelperDetectImminentCollision) function is not available and hence I am not able to find an output of gpsSensor to formulate collision detection

From the information provided, it is my understanding that you are not able to locate the function "exampleHelperDetectImminentCollision".
This function is defined in one of the examples from the UAV Toolbox. You can find this example here - Avoid Moving Obstacles Based on Radar Detections - MATLAB & Simulink (mathworks.com)
I suggest that you look into the example on "MATLAB Online" by pasting the command -
openExample('uav/AvoidMovingObstaclesBasedOnRadarDetectionsExample')
