How to make a cross sectional profile with different angles?

I want to make a cross sectional profile for a gray-scale image with different angles. I want to first select a pixel.A line should be made so that the selected pixel should be the center one and the profile should be made for it. Likewise with the same line and the selected pixel as center, i want to make the profile for different angles.
