GPU or Intel Xenon Phi Coprocessor?

I was wondering why MATLAB allows 512 workers for local system using the parallel computing toolbox? Regular computers don't have CPUs with that many cores. GPU computing is different from using Parfor and that greatly complicates my problem. Will the parallel toolbox work with a Xenon Phi coprocessor and will it be as if I had a system with all the processors of the Phi and the CPU? Can I use simple parfor loops with Xenon Phi? If not I think the 512 workers is just a waste.

By default, Parallel Computing Toolbox uses as many workers as you have real cores on your system. The upper limit of 512 workers is intended to be "effectively unlimited" for all practical purposes on current systems. (I don't quite understand what's being "wasted" here.)
Parallel Computing Toolbox does not support Xenon Phi.
