You need to use the handle of your uitable.

You can do this

set(handles.uitable1, 'data', yourData);

You can probably use OOP and do it like this if you have R2014b or later:

handles.uitable1.data = yourData;

If you're not using GUIDE, get rid of the handles. prefix.

set(uitable1, 'data', yourData);
