16QAM-OFDM Modulator using Comm Toolbox in Simulink, What is the Number of Symbols?

I would like to build a 16QAM Coded OFDM Time Signal. Mainly to mimic an LTE 20MHz BW signal up converted to 800MHz for use in an RF model I'm building in Simulink.
I was going to have a random datastream of Fs = 20MHz that is then coded using the "Rectangular QAM Modulator BB Block" which then is inputted to the OFDM modulator to get the OFDM signal out. Then I would upsample using the Raised Cosine Filter to a proper sample rate to up convert to 800MHz. The problem I am running into is what the "Number of OFDM Symbols" is.
Do I need to convert the QAM serial signal into Parallel data streams first? Say my sample per frame is 20, I could then parallel this into 10x2 which is an FFT size of 10 (assuming no guard bands or DC null), and 2 symbols?
I guess I'm confused by the meaning of "Number of Symbols" even though it says it's the number of symbols in the time frequency grid.

Here is an example in the product that shows the use of QAM Baseband Modulator with OFDM Modulator - hope this helps.
