RGB = imread('your image') ; % read image, color image
R = RGB(:,:,1) ;
G = RGB(:,:,2) ;
B = RGB(:,:,3) ;
% write to excel
xlswrite('Red.xls', R)
xlswrite('Green.xls', G)
xlswrite('Blue.xls', B)
