There are ways to evaluate the function or return the string of the function expression, which I know. But is there a way I can return the result as a function object? Because I need to use that fitted result as a part of an operator to be solved by CHEBFUN. Can someone suggest a way? Specifically I would like a fit of Gaussian polynomials up to some degree like in the curve fitting toolbox.

Under 'Fit' menue, 'Save to Workspace' will save a cfit object of your choice to name. Not precisely sure what you're then wanting to do, but I'm guessing probably will serve the purpose.

What I mean is not using the menu etc but a command. Because I want to create a loop that does multiple fits, and use multiple fits

Use the fit command, then.
doc fit % for the details...need to know a model class, of course.
