How can I train a cnn on movie input data

Hi
Is it possible to train on non image data? Am I forced to use just 1 or 3 channels? I want to use a 3d convolutional layer where the third dimension is time. Filtersize in this third dimension is equal to the respective inputsize.
e.g. Input: 40x40x30, convfilter: 15x15x30
I have access to v2017b and all toolboxes.
