How to generate a Surface plot?

I've some tabular data of 3 columns and 10 rows. I would like to generate at each intervals of time using interpolation and generate a surface plot for any two columns with time.

I suspect that you will want to use griddedInterpolant and surf()

I got the data values using scatteredInterpolant. But unable to find out the surf plot for 3 variables (time with other 2 variables). I've used the surf() function unable to obtain.
