How to Interpolate lat,long,alt information and SRTM-3 data?

Hi, I am new to matlab.I am looking for a way to interpolate lat,long,alt information which I have in my matrix on to SRTM3 data file. I already have .hgt file, but I am looking for some ideas or code, which would help me to start coding.
