How to process signal from load cell whose input signal are SCK and DT in simulink?

The measurement can be done in Arduino IDE using exsisting program with offical library. I figure one is clock signal, the other is data. Both of them are digital. But I have no idea how to process such signal and generate force value in simulink. The answers to this question I found are confusing to me.
