It's 2020 - Can I get a latex interpreter to rename the UITable columns??? Pretty please?!?!?!

I've tried Unicode (doesn't have half of the subscript charatcers I need no matter what font I install). Latex is great, but Matlab only somewhat supports it for app designer. I made a wonderfull lookup table app for my thermodynamics class, however, the table columns look like hot garbage. I have looked at any number of forums for the solution, nothing.
