How to extract temperature from the same ROI in a thermal video?

Hi, i need to extract the temperature value from a thermal video but i dont find the way, i was thinking about extracting the mean temperature from a ROI already defined that moves as the video does. Is there any script that could be helpfull? I'm quite lost at this point, thank you so much.
