how can i select texture feature

my project is to identify the maturity level of the coconut. for that i tried color feature extraction. based on the color level in the three different location of the coconut i identified it is matured or tender. Now i want to use texture feature extraction to identify the coconut is matured or tender i attached the coconut image get from real time.. pls help with ur answers

MATLAB has a few texture functions like stdfilt() and entropyfilt(). Try them. Good luck.
